For a long time I’ve wanting to share with you this recipe about how I make my homemade granola. I make it often, and some of you asked me about the recipe, so here it is :)

My mother in law shared a recipe with me a long time ago and I lost it, so I started to make my own recipe using the things I remember about her recipe ha ha, and it actually turns out yummy!  One thing I like about making granola is that I always can change ingredients and use what I have at home. Some days I use walnuts, and others sunflowers, chopped cashews or almonds or mix two or three of those using the recipe measurements. But the end result is always similar, and so delicious!

This recipe takes about 10 minutos to prepare and 60 minutes to bake. It’s something you can start in the morning while you are cleaning the house, playing with your kid or making your art. This recipe makes about 5 cups of granola and will last approximately three weeks if you store it in a airtight container.

INGREDIENTS:

  • 3 cups of oats
  • 1 cup of cranberries
  • ¼  cup of sunflower seeds
  • ¼ cup of chopped almond seeds
  • 6 tablespoons of water
  • 3 tablespoon of agave
  • 1 teaspoon vanilla extract

STEPS:

  1. Turn on the oven to 250 degrees
  2. In a bowl mix the oats, cranberries, sunflower seeds and almond seeds.
  3. In another bowl mix the water, agave and vanilla extract
  4. Add the oats, cranberries and nuts to the bowl with the water, agave and vanilla extract and mix together until they are completely covered
  5. Spread the mix in a large cookie sheet.
  6. Bake for 60 minutes but come back every 15 minutes to move the granola with a spoon so it doesn’t burn in just one side
  7. Let it cool and store in a container with a lid and enjoy!

I created this recipe for ebay a few months ago and I wanted to share about it here on the blog because I know you guys are going to love these yummy mocha paletas during the warm days of spring and summer!

My mom’s hot chocolate memories inspired this recipe. I’ll always remember tasting the hint of sugar, vanilla, and cinnamon mixed with a toasted chocolate flavor. So when I started to make my own coffee, I started to add ½ teaspoon of cinnamon together with 4 tablespoons of ground coffee and place it to brew. Using that idea I created these mocha paletas, but as a special touch, I added a pinch of cayenne pepper. INGREDIENTS:

  • 4 tablespoons of ground coffee
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon of chili powder
  • 1/8 teaspoon cayenne pepper
  • 1 bar of Mexican chocolate bar, something like Chocolate Ibarra or Chocolate Abuelita is a great option
  • 1 cup of almond milk

STEPS:

  1. Stir together the ground coffee, cinnamon, chili powder and cayenne pepper, place into the brew basket.
  2. Set the carafe in place to brew. I made about 3 cups of coffee.
  3. While the coffee is brewing, mix almond milk and a bar of a chocolate bar to make hot chocolate. You can add as much chocolate as you want for a more intense and sweet flavor.
  4. When the brew is complete, mix the coffee with the hot chocolate and place the mix into the popsicle molds.
  5. Allow pops to freeze fully overnight, or about 8 hours.
